Shawn's Sweet Potato Casserole

Casserole:
  • 4 cups mashed, cooked sweet potatoes
  • 1 cup sugar
  • 1/2 cup melted butter
  • 2 eggs beaten
  • 1 tsp vanilla
  • 1/3 cup evaporated milk

  • Topping:
  • 1 cup light brown sugar
  • 1 cup chopped pecans
  • 1/2 cup flour
  • 1/3 cup butter


  • Preheat oven to 350 degrees. Lightly butter a 9" x 13" pyrex/oven-proof pan.

    Casserole prep: Mix all the casserole ingredients together with a good mixer for a couple of minutes. Pour into buttered baking dish.

    Topping: After ingredients are mixed together well using your hands, sprinkle evenly over the potatoes.

    Bake for about 25 minutes [or however long it takes], until the casserole looks lightly browned and a bit puffy.

    Let the dish sit for about 5 minutes and then serve.

    Serves 8 [approximately]

    Makes 8 cups [approx]
    Carbs = 66.6g per cup / Calories = 567.4 per cup

    Yum . . . this is definitely Morgen's favorite dish her Aunt Shawn makes for the holidays.

    NOTE: If this recipe is too sweet for you, the sugar in the casserole & topping can be cut in half.
