Gay's Hash Brown Potato Casserole

  • 2 lb. bag of frozen Hash Browns
  • 1/2 Onion, finely chopped
  • 6 tbsp. melted Butter
  • 1 can Cream of Mushroom soup
  • 8 oz. (1 cup) Sour Cream
  • 1-1/2 tsp. Salt
  • 8 oz. Cheddar Cheese, shredded
  • 2 cups Special K cereal
  • 6 tbsp. melted Butter


Preheat oven to 350 degrees. Generously butter the sides of a large 13 x 9 inch baking pan.

Layer the hash browns and chopped onions.

Mix in a small bowl the melted butter, cream of mushroom soup, sour cream & salt. Spread this mixture on top of the potato & onions. Sprinkle with the shredded cheddar cheese.

In another small bowl, mix the Special K cereal with the 6 tbsp. melted butter; and then sprinkle evenly over the cheese topping & potatoes.

Bake for 1 hour and 15 minutes. When you remove from oven, let it sit for 5 minutes before serving.

These are the BEST potatoes I've ever had, and everyone who has tasted them can't help but go after 2nd & 3rd helpings . . . YUM!
