Beverly's Summer Squash

  • 1 lb. summer squash, cubed
  • 1/2 cube butter
  • 1 clove garlic, minced
  • 1/2 cup sharp cheddar cheese, grated
  • Salt and Pepper to taste


Blanch the summer squash, approximately 5 minutes. Dip immediately into cold water to stop the cooking process.

Melt 1/2 cube of butter in a 2-quart sauce pan. Add the blanched squash, minsed garlic, and seasoning to the butter, and simmer for approximately 8 minutes.

Add the cheddar cheese and stir. Place lid on pan and simmer slowly until cheese melts. Serve immediately.

YUM . . . This old family recipe is so delicious!
