- 4-6 28 oz. Progresso, crushed tomatoes with added puree
- 1/2 cup olive oil
- 1 tsp. oregano, dry
- 1 tsp. parsley leaves, dry
|
- 1 onion, chopped
- 6+ Italian sausages
- 2 tbsp. sugar
- salt & pepper to taste
- 1/2 cup Parmesan cheese, grated
|
Coat bottom of pan with cooking oil. Add the chopped onion and sautee in oil until lightly browned, or transluscent. Put all the canned crushed tomatoes through the blender to puree out all the lumps of tomatoes. Caution: don’t over-puree, it takes only a few seconds. Add tomatoes to oil along with all the spices and simmer for at least one hour. Simmer and steam sausages in a little water, until they’re done - about an hour. Add these to the sauce with meatballs (optional). Sprinkle with Parmesan cheese.
