- 2 cups all purpose flour
- 1 tbsp. baking soda
- 1/8 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. clove
- 1/2 cup oil
- 3/4 cup packed light brown sugar

- 1 cup granulated sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 1/2 cup applesauce
- 3 Apples [peeled and cut]
- 1/2 cup chopped walnuts / pecan nuts

Put a rack in middle of oven and preheat oven to 350 degrees. Generously butter 9 x 13 pans and dust with flour, knocking out excess.
Sift together flour, baking powder, baking soda and salt into a medium bowl. Beat together oil and sugars in a large bowl with an electric mixer at high speed to medium and add eggs one at a time, beating well after each addition. Add vanilla, applesauce and vanilla, beating until just combined. Reduce speed to low, add flour mixture, and mix until just combined. Stir in nuts and apple.
Pour into buttered pan and smooth top. Bake until a wooden pick or skewer inserted in center of bread comes out clean, approx 60 minutes.
Remove bread from pan and cool completely, right-side up, on rack.
Temp: 350°
